Yield: 6-8 Oz Jars
Step 1:
Rinse out six 8-Oz canning jars with boiling water.
Step 2:
Finely chop 6-8 peaches (depending on the size of peaches, you will need 2¼ cups of chopped peaches). Do not puree.
Step 5:
Immediately stir the pectin mixture into prepared fruit mixture. Stir constantly for 3-minutes.
Step 6:
Quickly fill the canning jars quickly to within a half inch of the top. Wipe off the edges of the jars and screw on the lids. Let the filled jars stand at room temperature, undisturbed, for 24-hrs.
Step 7:
You can store your finished deliciousness in your refrigerator for up to three weeks and it will still remain fresh tasting.
For longer term storage, simply freeze it. It will keep for up to a year. When thawing though, leave it in the refrigerator to thaw out.
