An excellent thickener that is low carb, low calorie, sugar free and gluten free
Glucomannan (also known as Konjac) plant, or the root, is a Japanese root vegetable that is full of fibre. It has been used by people in East Asia for thousands of years and is mainly grown in Asian countries. The fiber is composed of mannose and glucose. It has the highest viscosity and molecular weight when compared with other dietary fibers. A typical serving of the powder is a half level teaspoon (two grams), which contains about five calories and 2.5 grams of fiber. This amount of fiber fulfills roughly 10 percent of daily fiber requirements.
Use it as a thickener in place of cornstarch - 1 teaspoon of Konjac flour equals about 10 teaspoons of cornstarch - to create delicious glucomannan recipes from scratch. Use it as a thickener in sauces and soups. Use it in your baking - 1 teaspoon of Konjac flour equals about 2 cups of wheat flour - or you can simply dissolve it water as a fiber supplement!
