Wash and dry the mint leaves and sorrel. Place them in the food processor with lemon zest and citric acid.
Add nuts and dried apricots to the food processor. Turn on and mix well.
Mix until fully incorporated.
Cool the mix in the freezer.
Roll into balls in a crumb of nuts.
Optionally, you can further grind the nuts into small crumbs and roll them in candy.
