This flavorsome crunchy snack is famously known in India as "kachori." The crisp kachori tastes exquisite with green chutney which is an exciting dip made of coriander, chilies, and, seasoning. It is often enjoyed with tea or coffee as a snack to satisfy appetites and enhance a mood at any hour of the day or night.
Heat the water in a pot or electric kettle to luke warm.
In a bowl, lightly mix the flour, citric acid powder, baking soda and salt. Add the oil and lightly mix again.
Add the lukewarm water and knead well to make thick dough.
Cover and keep aside.
Heat a pan to dry roast the sesame seeds, groundnuts and fennel seeds. Then, as they release its aroma and change in color, remove from flame.
Ground them to powder form and transfer to a bowl. Add the dry coconut after grating it finely.
Add all the spice powders (garam masala, cinnamon, turmeric, and red chili), sugar, salt and citric acid. Mix well and keep aside.
First, take the dough and divide it into 10-12 medium-sized balls.
Take one dough ball and using a finger make a hollow in the middle of the ball.
Fill one spoonful of the spice stuffing in the hollow and close the opening of the dough ball. Repeat the process for rest of the dough balls.
Lightly dust the rolling board with flour. Take one stuffed dough ball and slowly roll it out to form a medium-thick flat circle. At the time of rolling do not apply too much pressure or else the stuffing will come out.
Lightly dust a tray and place all the rolled-out dough balls in it separately. Keep in mind not to overlap them. Otherwise, they will stick to one another.
Heat oil in a pan in full flame! Once the oil is hot, lower the flame to medium heat. Deep fry the stuffed rolled-out dough balls one at a time. When a little puff is visible and both the side turn light brown in color remove from the oil. Repeat the frying process for each kachori.
Serve the kachori in a plate along with the green chutney. You can also enjoy this delicious Indian snack with your favorite sauce or dip.
