Chocolaty Fudgy Brownie Blasts

Gluten-free lovers this is the recipe for you. Our chocolaty fudgy Brownie Blasts are exploding with chocolate flavor and are simply soft chewy delights.

  Total Time: 50 Min 

  Yield: Serves 8

Ingredients:

  • 1/3 cup Dutch-processed cocoa
  • 1/2 cup plus 2 tablespoons boiling water
  • 2 oz. unsweetened chocolate, finely chopped 
  • 4 tablespoons (1/2 stick) unsalted butter, melted
  • 1/2 cup plus 2 tablespoons oil (corn, canola, vegetable)
  • 2 large eggs
  • 2 large egg yolks
  • 2 teaspoons pure vanilla extract
  • 2 1/2 cups sugar
  • 1 3/4 cups good quality gluten-free flour blend
  • 1/2 tsp. Cape Crystal xanthan gum 
  • 3/4 teaspoon table salt
  • 6 ounces bittersweet or semi-sweet chocolate, chunks or chips

How to Make It:

Step 1:

 

Preheat oven to 350°.

 

Line a 13 x 9 inch baking pan aluminum foil. Lightly spray foil with a nonstick cooking spray.

Step 2:


In a large bowl heated over simmering water, whisk cocoa and boiling water together until smooth. Add unsweetened chocolate and whisk until the chocolate is melted. Remove from heat.


Whisk in the melted butter and oil. Add eggs, yolks, and vanilla extract, and continue to whisk until smooth. Whisk in sugar until fully incorporated.

Step 3:

 

In a small bowl, whisk together the gluten-free flour blend, xanthan gum, and salt. Stir the flour mixture into wet ingredients and mix with a rubber spatula until combined.

Step 4:

 

Stir the flour mixture into wet ingredients and mix with a rubber spatula until combined.

Step 5:

 

Fold in the bittersweet or semi-sweet chocolate pieces.

Step 6:

 

Scrape batter into prepared pan and bake until toothpick inserted halfway between edge and center comes out with just a few moist crumbs attached, 30 to 35 minutes.

Step 7:

 

Transfer pan to a wire rack and cool 1 1/2 hours.

 

Store leftovers at room temperature. (if there are any :-)
