Our gluten-free cornbread recipe uses guar gum. Guar gum is used as an additive in baked goods to increase dough yield and improve texture. It has eight times the thickening power as cornstarch.
Step 1:
Preheat oven to 250⁰C and get your baking pan greased.
Step 2:
Measure buttermilk and baking soda using gram scale and place these ingredients in a mixing bowl, mix together and allow to sit.
Step 3:
In another mixing bowl, add the melted butter and sugar and mix into cream.
Step 4:
Whisk and add the eggs to step 2.
Step 5:
Pour all the ingredients used in steps 1-3 together and mix thoroughly.
Step 6:
In another mixing bowl, whisk cornmeal, gluten-free flower, guar gum and salt together.
Step 7:
Add the whisked ingredients in step 5 to step 4 and stir well. Pour the mixed ingredients (paste) in step 6 into the greased baking pan.
Step 8:
Bake at 250⁰C for 25-30 minutes until you are sure it is well baked.
Cool and serve.
