Macadamia Pudding - It's Nuts!

You want quick? Well macadamia nut pudding can be whipped up in a matter of minutes. The secret for this six ingredient vegan desert is in the agar agar.

  Total Time: 25 Min 

  Yield: Serves 2


  • 1/2 cup macadamia nuts
  • 1 1/2 cups water
  • 1/2 tea spoon vanilla extract
  • 1 pitted Madjul date
  • 1/4 cup 100% pure apple juice
  • a pinch less of 1 teaspoon Cape Crystal agar agar powder
  • A few berries to garnish

How to Make It:

Step 1:


Toss all dry ingredients in food processor (except for the berries) and blend until smooth. I told you it was easy.

Step 2:


After blending pass through a sieve to remove unprocessed pieces.

Step 3:


Place 3/4 blended macadamia nuts 1 1/2 cups water, 1/2 teaspoon of vanilla extract, 1/4 cup apple juice, plus a pinch less of 1 tea spoon agar agar powder in a pot over medium heat and bring to a boil.


Simmer for 2 minutes, continuously stirring. Then remove from heat and let sit for 5 minutes

Step 4:

Pour into ramekins or serving cups and refrigerate to allow setting. Garnish with strawberries berries, macadamia nuts and a mint leaf.
