Low-Carb Blueberry Cobbler

This recipe tastes delicious and others who try it would never guess it was gluten-free with no sugar added.

  Yield: Serves 9


  • 1/3 cup coconut flour
  • 1/4 cup low carb sweetener add more if needed
  • 1 egg beaten
  • 6 tablespoons butter melted

How to Make It:

Step 1:


Add berries to a greased 9 x 9 -inch oven safe dish.

Step 2:


Sprinkle with lemon juice and xanthan gum.

Step 3:


Whisk together the almond flour, coconut flour, sweetener and egg until mixture resembles coarse meal.

Step 4:


Pour this mixture over berries.

Step 5:


Drizzle melted butter over topping.

Step 6:


Bake at 350°F (190°C)  degrees for 25-minutes or until top is nicely browned.
